Banana Loaf

Just because Eastbury Kitchen remains closed, we won’t let that stop us from indulging in homemade cakes! This banana loaf is very easy to make, perfect for a Spring treat, and is sure to be on the menu in the not-to-distant future. 

Ingredients

100g butter

175g caster sugar

2 eggs

2 ripe bananas, mashed

225g self-raising flour

1 tsp baking powder

tbsp milk

Recipe

1. Pre-heat oven to180℃/350℉/Gas Mark 4

2. Measure all the ingredients into a mixing bowl and beat for 2 minutes, until well blended; an electric mixer is best, but a little elbow grease and a wooden spoon works well too!


3. Spoon the mixture into a 900g/ 2lb loaf tin, lightly greased and lined with baking parchment, and shake until level.


4. Bake for about 1 hour, until well risen and golden brown.
